Transit times to be changed for one particular item

Dear Gurus,

We are sending goods from one OU to another OU using IR-ISO process. For this Shipping network has been defined with transit days = 2 as it is done through Air. For one particular item , a decision has been made to use sea freight between the same 2 OU's and the transit time is 21 days.

Please let me know how can this be setup so that planning takes into consideration the transit time as 21 days for this particular item.
