EBS 12.2.7 - New Integrator Questions on Content

I'm creating my first Integrator where we just upload data from the created spreadsheet into a staging table.  That works great.  But then I added the Content so it pulls the data automatically but I have a couple of questions:

1) It's separating text into separate columns when the text is surrounded with double quotes but contains a comma in the text.  How can I stop that from occurring?

2) Is there a way for it to dynamically pull data from the .csv file into the spreadsheet every time you open the spreadsheet?  I thought that was what Content was supposed to do but it's always the same data even if I update the .csv file and save it before opening the spreadsheet,
