Need Information to Set up Data Privacy

We are implementing Data Privacy across the board and need some information in regards to get our tables/fields in to the module so we can use the data.

For example, we are thinking we would need to upload all of the TE tables and fields in order to get started.  Would that be a true statement?  If so, how do other customers get their table data loaded?

Any information that can be provided to help us get started would be greatly appreciated.
