Configuring the current structure of SOV Payment Applications

I am new on updating the SOV Structure. I would like to seek your help on the following items below:

1. I have added the screenshot below. Where is the DataSource referenced? We would like to add new column on the structure of SOV but it is not available on the dropdown.

2. Is the highlighted phrase below referring to the detail form of the Payment Application Business Process
