Contract is Self Approving when User Auto Approval is disabled

The User Auto Approval and the Step Self Approval options were disabled on the Documents Approval Definition. No matter the two options were disabled, if the user who created the contract (which also has approver workflow roles), is added at the end of the approval grid, the system auto approve the step at that level.

See the screenshots attached. Any idea of why this is happening? Any missing configuration?

Any help is appreciated.
