Modifying Due Date (ITEM_LINE_SF)

Did anyone had to massively change the Due date for a later date for hundreds or thousands or students . It's on the page  Student Financials > Collections > Change Item Line

The idea is to let students with due amounts in the winter sessionto be able to register to the summer session. For now, we are told by the users that toggling on and off the service indicator (or changing the minimum amounts) is not an option but need to test it anyways.

Has anyone done this via script and can recommend what tables we should be looking to update? The programmer-analyst is looking what the update button does exactly.
