EBS 12.2.9 - Handling weekly customer shipment pick-ups in OM and scheduling

Our business has some customers whose standard priority orders should only be shipped from our warehouse on specific days of the week (their freight forwarder is scheduled for these days),
The request from business is to have the Sales order dates (mainly the Schedule Ship Date and the Schedule Arrival date (adjusted with the Intransit time)) aligned with these days as the dates are communicated to the customer. Both when the sales order demand can be fulfilled with On-Hand supply and also when it needs to be sourced.
We've looked at setting up Customer calendars for the customer sites in question, but the issue is then all orders will pick it up, including high priority orders, which should be shipped asap regardless of the day of the week.
