Steps to restore to previous restore point during the upgrade to 19c

Hi all

We are planning to upgrade 12.1 database to 19c database  which is on two node RAC environment(Linux) and has standby  . I want to create a restore point as part of fallback plan /upgrade failures .How to  restore to the previous restore point  and start up  on startup on 12.1 . Need steps
