Best practice for a low OVM infra-structure

After some adventures on my work and also with some help (some very useful) found here, I decide to share part of my work, asking someone here who can share some experience as also hopping some guru kindly say something to help improve.
When I started work (on current company), I've found this:
Infrastructure:
- 2 OVM servers (each with 48 cores 256GB RAM, 2 HBAs with native multipath and 3 bonds with 2 NICs, each with 10Gbits)
- 1 SAN FC 16Gbits
- 64 LUNs (different sizes)
- 19 repositories (one for each VM)
- 19 VM
- All other LUNs are exposed to mostly all VMs as physical disks
