How can i generate Invoice for lots which are expired

We have a requirement where we need to destroy Inventory physically those are expired and need to generate an Invoice from system for those expired Lots. This is a statutory requirement where we need to report these Invoices to government.

Currently we are extending the expiry dates and creating the sales order to generate Invoice. Is there a way if we can use the lots as it is in order without changing the lot expiry dates.
