Planning New Environment OL7.9 vs OL8.3

We have 2 Oracle x5-2 Servers and 1 ZFS3-2 Storage Appliance and are in the process of replacing OVM with Oracle Linux Virtualization.

I'm looking for feedback to run Oracle Linux 7.9 (latest version) or Oracle Linux 8.3. I've read some article on the internet that some Oracle Linux 7 features are not in version Oracle Linux 8. By viewing various videos on the Oracle Learning YouTube Channel, it does seem Oracle Linux 7 GUI is more comprehensive, which I realize may be deceiving since I am new to OLVM.
