nfs server not responding still trying

NFS server (VMware guest) running Oracle Linux 5.3

NFS Clients running Oracle Linux 6.10 and 7.9 (also Windows) have intermittent problems where NFS server stops responding.

The issue does not normally resolve by itself (i.e. no "NFS server ok" message is subsequently logged). Problem is resolved manually by forcibly unmounting then re-mounting the shares on the NFS clients,
