Need a solution to cater 'Carcass' business in Oracle EBS

Hi, we have a business related to 'Carcass'. How can we setup complete carcass business in Oracle EBS, what is the best solution, flow in Oracle, etc. It starts with the purchase of carcasses, and then different pieces like ribs, chucks, flank, etc are sold. How can inventory be evaluated and costed.

It would be really helpful if anyone who is already working with such a business scenario could connect with me. TIA
