Changing Category Code Labels

What is the recommended method for changing the labels on Category Codes? I think I've done it through P92001 on fat client previously, but I don't remember for sure.

In the attached example, which override will show up? Intro Date because it's last? Where does the jargon code come into play.

Is there a better method to accomplish this?
