step-by-step guide to generate ETEXT output from HCM Extracts?

I need to Generate etext output from HCM extracts, so that I can get ".dat" output file to upload in HDL to Mask the Email address which is stored as "firstname.lastname@company.com" in system to "xxfirstname.lastname@company.comxx".

Is there any document which guide step-by-step to generate ETEXT output from HCM Extracts?
