EBS upgrade

in Database Install/Upgrade/Opatch (MOSC) Question

I would like to upgrade Oracle EBS both database and application running on Solaris SPARC 64 bit. The database is Oracle Database 12c Enterprise Edition Release 12.1.0.2.0 - 64bit and would like to upgrade to 19c (19.3). The application is on 12.1.1 and would like to take it to 12.1.8 or 12.1.3 at a minimum.

I have done this on a test environment, but the difference is production is running on ASM test was non ASM. Production also have a physical standby that is non ASM. I would like to do this with minimal down time, Please advise or suggest best documents to follow.
