Charging interest for a specific customer

Good Afternoon,

We have a request from business to implement charging interest on late payments for Debtors in breach of their contracted payment terms.

At this stage it's for a single debtor so ideally we would like to be able to flag it at customer level and not bu/project/activity id level.

We are on 9.2 image 37 but I have not been able to find anything referencing specific debtors.
