Database Migration - Network clarification

We are in the process of Database migration from Oracle 12c to Oracle 19c on the new server. The ip address of the original production server and the new production server is same. The old production database server is running on Oracle fail safe. The new production database server is Oracle 19c grid infrastructure cluster and the new database going to be Oracle RAC one node. Our vendor is planning for rolling upgrade. We have created physical link between the old production server to the new production server using different subnet. What is the recommended approach in order to do
