Oracle MICROS Simphony - Is application development on Linux possible instead of Windows?

I'm trying to develop an application that will make calls to Simphony for room service requests and whatever else Simphony has to offer. Oracle Support is telling me I need to install something called Simphony Lab on a Windows 10 machine but I don't have a Windows machine, I do all of my development in Linux. Is there some sort of Postman API solution like there is for Opera? Or will I be forced to work in Windows for all Simphony development? Thanks.
