Help with Processing Constraint usage

Hello Community,

I need some help to control user modification over a sales order booked with ATO/PTO Model configured at line.

I'm sure that it can be controlled using processing constraint but although I have done several test i'm not able to get the desired result.

We use ATO/PTO Model to configure the final equipment ordered by the customer. The business need is to create a new version of the SO each time that the sales department makes a modification over a configuration (adding new options, cancelling other selected in previous version, etc) if the SO is booked.
