Extract setup/configuration data from existing EBS version

Hello everyone,

Newbie here. My client is shifting from EBS R12 to Fusion Cloud. I would like to understand the process on how to extract existing setup/configuration data for the Purchasing application to review and prepare configuration documents for Fusion implementation. Any document that mentions the process or any best practices to do the same can help.
