ASM disks missing after reboot

We have a server with NVMe drives (non RAID) that we want to use for ASM. We configure ASM and set the ASM partitions and they show in ASM when done. However when we reboot one of the ASM disks disappears and it's not the same one every time.

Server is Oracle linux (8.7 since 9 doesn't support Oracle 19c)

Oracle is 19c EE 19.17

One article I read suggested it might have to do with the native sector size on the disks. They are big drives (2.9TB ea).
