Auditing CRUD Statements with Unified Auditing

With Unified Auditing and Audit Policies, how do I audit CRUD statements on certain tables within my schema and write these records to the Unified Audit Trail Records in the AUDSYS Schema. I am working with Database 19C. Also looking at auditing the old and new record rather than just the person who carried out the change.
