How do I increment a Date in a Word BI Publisher RTF template

I've created a Word BI Publisher RTF template, the report is a sign-in sheet and the users want to generate one page for each day of the week, all that is working just fine except for the date, they want to add the date for the correct day of the week on each page, so page 1 has the date from the xml file, page 2 has 1 day added to the date and so on.

I've tried adding a function as shown below but BI Publisher crashes when I try to add the function. Am I going down the right path with this? If not can someone point me in the right direction?
