How can I change the default account From email address in BPEL email component and ent mgr?

I'm creating a SOA BPEL process that needs to send an email to notify users. I am trying to change the FROM address. The email component form allows a From Account and it uses "Default" by default. I've tried entering a different address here but it always takes the default account. How can I create a different from account that I can use specifically for this bpel?
