How to keep open service line item until other inventory items status getting close in a Sales Order

in Order and Service Management (Communications Industry) (MOSC) Question

Hi,

Please advice me how to keep open service item after booked a sales order. If my sales order have one service item and one inventory item, once I booked the sales order, service item status will be changed as Closed, and inventory item status will be changed as Awaiting Receipt/Awaiting Shipping. So my client need to keep open service item until other item status getting close.
