Service item creation

Dear All,

One of our clients is using OM to deliver services to customers. Currently we have configured the service item in a way as soon as it order is booked, the service line get closed.

The problem here is we do not know which services we have delivered and which are still to deliver. Therefore, how we can configure the item so that, we can close the service line only after we deliver the service.
