Person Profile - Text Catalogue for Self Service

PeopleSOft - version 9.2 PT 8.59.18

When setting up new Content Types for Person Profiles, we find that it's not always intuitive and would like to add instructions. Is there a list of text catalogues that can be used for adding new content items (fluid) for self-service?

Also, is there an option for a drop-down field versus a prompt?
