Can we change a rich text to a different type of text?

For nutrient profile analysis, we are set up to enter a rich text with a character limit of 1900. If characters are greater than 1900, an error is generated. Could this be changed to support our larger meals that have multiple components? Also, if the font size is smaller can more characters be entered? Reason to believe that in our build we are unable to use the rich text as expected?
