About repositories [How to prevent local software mirror clients from updating to latest?]

I have a system on OL8.6 and do not want to go higher at this point…
I have the following channels
@anaconda
@AppStream
@ol8_appstream
@OL8_appstream
@OL8_baseos
@ol8_baseos_latest
@ol8_gluster_appstream
@ol8_KVM_appstream
@OL8_ovirt44_extras
@ol8_UEKR6
@ovirt-4.4
@ovirt-4.4-extra

So my question if I build a local repo and populate all but the OL8_baseos and ol8_baseos_latest it with the latest of available updates, but keep OL8_baseos and ol8_baseos_latest on the latest of 8.6, what mechanisms are in place to prevent gluster, ovirt & KVM not to go to a ol8.9 level no backward compatibility?
