How does the SBC stitch the different call legs togather?

In my sip-config if operation-mode is not set to "dialog" then the SBC should not preserve the call-id it received. How does the SBC then tracks the different legs of the call and what is the best way to follow the call in the various logs once I enable debug? Thanks.
