methods to provision new VM's

What are the best ways to deploy new OL servers in a virtualized on-prem environment?

A number of years ago I spent some time working on kickstart but I forget what all is required and is that still my best option? The server admin team now just uses images and then they create new VM's from that but it can be a bit onerous as we have a few required server configs so the image needs to be adjusted every time to meet storage needs, maybe different packages, server name change, etc. so my thinking is kickstart would be more dynamic and we just have a few config files we need to build
