Looking for information / documentation on EDI data flows & tables

We are using eCommerce Gateway for several Inbound and Outbound documents.

I'm looking for more details on the tables that are used for both Inbound and Outbound data.

I know there are the EDI Data Definitions / Layouts, but I am looking to put together a flow and mapping diagram that shows all of the tables & fields/columns that the data flows through.

Example: We do a ship confirm and the ASN file is created (DSNOXXXX) in the Outbound folder.

Which tables & fields/columns is the data pulled from in the EBS tables to the Definition Layout (flat file created).

And are there any tables (Interface or other) that the ASN / DSNO data is stored in? And if so, what are those tables?
