When can I delete old encryption key?

Hi,

on my ZFS Storage Appliance I have created new encryption key and used it to encrypt my storage pools.

Question is, are the pools immediately encrypted with the new key?

When can I delete old key?

I am asking as when trying to delete the key, I receive warning that "Deleting this key will result in all data in the shares that are encrypted using this key to be permanently and irrecoverably inaccessible". I would not like to loose my data which were encrypted with old key. On the other hand I don't see any re-encryption (with new key) process to be initiated. So I am a bit warried if deleting old key will not make irreversible changes to my data?
