Can we add new values under status in RFQ form

I want to add new values under status in RFQ, in my case users don't want link RFQ and Quotations with Requisition's or PO's. Currently they are not using RFQ and Quotation process in system. This process they are following through excel; they want to track this in system. If we do personalization what will be the impact, please advise.
