How to build a Demo database on PeopleTools 8.60

Prior to the introduction of PUM, PeopleSoft provided a traditional “Demo” database; a clean, data‑free baseline environment. Now that PUM is the standard delivery mechanism, how can I create a Demo‑equivalent database on PeopleTools 8.60?
Is it still possible to use the older method of running the delivered database creation scripts, and if so, where can I find the current documentation?

I specifically need to build an environment that matches our Production level (HCM PUM 037 on PeopleTools 8.60).
Is there any way to obtain older PUM images so I can build a Demo environment at that same application and tools version?
