how to change default status

I would like to set "Pending Inspection" as default Inventory Status. Can you do that?

Just a confirmation for example using the Inventory transfer transaction. If I move a Item with "In stock" status to another location, will its status at the new location be unchanged (In stock) or set with the default status (Pending inspection) ?

Can you explain also how to define the default status (if we need to change it at some point) ?
