How to dynamically edit fields in quotes/orders?

Hello,

I am looking to be able to view/edit Est Gross Profit Percent in a Estimate/Sales Order. I currently have it as a sublist field, but it only calculates/shows in view mode, and not in edit mode (in edit mode it is greyed out and blank). Can I edit Est Gross Profit Percent and have the rate field automatically update in edit mode? Or is there some way I can have the Est Gross Profit Percent field be visible in edit mode and not just in view mode?
