What is "Changed Fields Data" on System Information Tab?

Does anyone know what the Changed Fields Data field on the System Notes tab of a Sales Order entails?

All it states are XXX Chars for the OLD and the NEW value, but not what those chars were before and what they are now. Is there a way to dig deeper into that?
