How do I remove the -new- option on custom fields for a cusotm role

Hi there, I have created some custom segments and custom item fields on an item record. The currently have the plus icon and the -new- field so users can create a new value if they wish to.

How can I restrict roles from having the ability to create a new value. They should still have the ability to select an option, just not to create a new one.
