I would like to know how to do subtotals in a pivot table (see picture attached)

If you don't have something making those splits (like a column attribute) you will need to add calculated items defining by hand what should be inside.
If your dimension is well defined for the business need, it will be a one-click action of adding totals on that column.

It's just there on your column "Mode de sollicitation contrat publié", click the total icon and select the position where you want it.
