Are you able to use the seeded Audit Report functionality found in the navigator under Tools>Audit Reports?

You can see the list of privileges in OBIEE navigating to Administration > Manage Privlieges. This gives you an idea of what you can enable/disable rather than removing privileges per role

Yeah it's a tricky one, I'm not a big fan of this approach (although I do like objects to be locked down). But it's the only potential approach I can think of right now, I suppose the privileges were built in this design to leverage in similar situations to this

One potential way of doing this is to assign the BI Publisher Data Model Developer Role privilege to the custom role and then lock down every existing data model update access to BI Administrator Role only. Note on this one it will only work when you schedule a report not run ad hod, so this will have to be added as a business process to only schedule (best to set up a job that runs daily/weekly/monthly)
