Can we download the activity logs for checklist?

Summary: We have faced one issue where checklist task are not getting assigned on expected dates.

For example: Employee record created on 3 Nov 2021 If the employee projected start date is 15 Nov 2021, the task "XYZ" should ideally trigger on 10 Nov 2021 (5 days prior to projected start date- As per setup done as initiation days --minus 5 days in checklist template general settings) whereas this task got actually triggered on 28 Nov 2021 (18 days late). We tried to replicate the same scenario in test instance and its working as per expectation/fine there.

In order to diagnose the issue, since we are doubtful if someone has done any manual interferences or played with / edit the due dates of assigned task/ allocated checklist, we are looking for some logs to go through.
