Sick Leave to be calculated for years

Summary: We have a requirement where sick leave needs to be considered for a period of 3 years. Oracle does provide Rolling Backward & Forward but the start date and End Date are dynamic and keep on changing. Is there any way to hardcode the start date and end date e.g. 1-Jan-23 till 31-Dec-25.
