how to hide email field in journey electronic signature

We are using Journeys e-signature to sign a contract checklist.

In the Contract checkling, we have a task type = electronic signature, and it links to open the

When the task is formed by employee, employee sign the Journeys with the name as a validaiton.

But customer doesn't need the "EMail" field on that page. How can we hide this "Email" field in Journeys?

We tried the Page Composer in sandbox but it didn't work.
