Feedback Centre - Request and Give Feedback need to hide person email address

In respect to GDPR we need to hide personal email addresses in person in either requesting or giving feedback - I have looked at VBS and there is no ability to hide this, I guess this person lookup/search is globaland I need to go somewhere else to set up? Ideally we would not want this to display anywhere as not everyone in our company has company email addresses and displaying their personal with breach GDPR.

Hoping someone has dealt with this before.!
