Some fields like Creation Date, Created By, Last Updated Date and Last Updated by cannot be set to read-only on the mobile UI for Opportunities even after configuring CX Sales script for opportunity in mobile developer tools.

We have observed that on the mobile OOTB fields like Created By, Last Updated By and Opty Last updated By are Editable on the OPPORTUNITY object.

Usually, they should be READ-ONLY. So we have tried to use mobile scripting in the mobile developer tools to make them READ-ONLY but even after using the mobile scripts, they are still EDITABLE on the Opportunity Mobile UI.
