How to create audit report using SQL statement where in similar result to history tab

Summary:
in history tab of each record, we can see the changes of each auditable fields.
like for example:
field1, we can see in the list the before and after change.
i know the DB table for audit logs, like HZ_ORGANIZATION_PROFILES_
but how can i have the same result in the history tab in the UI
where in i can see the before and after change of each auditable field?
what i notice in the audit table, it always logs the entire changes.
