Different dates on production and test environment for invoice template

Summary:

We are encountering an issue where in production a request ship date is shown as 10/12 in the invoice template. But in lower environment, it is 10/13 (Seen in the XML 10/13 is correct). I am wondering what can cause this? We also have an instance where a user can see 10/13 but another user sees the 10/12 in prod. We have ruled out timezone of user as they have the same timezone preference.
