What can possibly be broken when an back up is completed of the Production environment?

Our production environment is going to have an back up taken in the next few days or so which will cause a 48 hour downtime to our production environment. Once the environment is back up I would need to validate that all systems are live and ready for use. What are some key things that I should check when the system is back online?
The Idea is to forsee what can possibly be broken?
